Cast Iron Steak Fajitas:
Ingredients :
1lb. Skirt steak thin slices
1 bottle beer
2 limes
2 garlic cloves chopped
Assorted colored peppers slices
1 jalapeno seeded and sliced
1 red onion sliced
4-6 tortillas (low carb)
Salt/pepper
Salsa, sour cream, guacamole, and shredded cheese to garnish.
Instructions:
In a large bowl, combine beef, beer, lime, salt, pepper, garlic. Cover and refridgerate 20 min.
Heat a large cast Iron skillet or grill pan over high heat or until very hot. Spray skillet with cooking spray and add peppers, jalapeno and pinch of salt. Cook until tender. Remove from pan to plate and cover to keep warm.
Add onion to hot skillet, saute until translucent. Season with salt and pepper. Remove and plate and cover to keep warm. Remove steak from marinade and add to hot skillet. Stir occasionally until browned and crisp.
Serve steak in tortillas with peppers and onions. Add optional garnishes.
