Man it's been a LONG week round here!!!!!   What is everyone got planned for your Cold Last Weekend of January?????  I plan on getting my Garden Plans in order, making my list of what will be growing and where......working on some crafts.....maybe doing a bit of Nature Photography......and mostly RELAXING!!!!  Wishing you all a peaceful, restful weekend!!!  See ya back round these parts on Monday!!!!!!

The Gypsy Homestead Food-Vibe of the Day:
Game Day Nachos 🏈⚾️
Ingredients
1 packet of your favorite Taco Seasoning
1 pound ground beef
1/2 yellow onion diced
Your favorite tortilla chips
1 can refried beans
16 ounces shredded cheese of choice (I used cheddar and Monterey jack)
3 roma tomatoes diced
2 to 3 green onions sliced
Instructions
Preheat the oven at 400 degrees.
Meanwhile on the stovetop, brown the ground beef and diced onions over medium-high heat until fully cooked (about 8 minutes) and drain.
Return the beef to the pan, and sprinkle on the taco seasoning.
Stir in 3/4 cup water, bring it to a simmer, reduce heat and simmer until the liquid mostly evaporates, about 5 minutes.
While the beef is cooking, add a generous layer of chips to a baking sheet lined with parchment paper.
Spoon on refried beans(I add a little water to them and warm them in the microwave first for easier spreading), These are thick, but I just add spoon fulls all over the chips. (The spoon fulls will spread with the heat of the oven.)
Sprinkle ground beef over beans and chips.
Sprinkle shredded cheese on top.
Bake at 400 degrees for 15 minutes.
Remove from the oven, and sprinkle on diced tomatoes and green onions.
You can add black olives and jalapeños if you want
I always put a little bowl of sour cream, and another with salsa on the table with these.
Serve immediately.

Time for optimism. After a couple of strange days - remember Mercury is still retrograde - there's a ray of sunshine. The Moon moved into Sagittarius overnight. That means the playground of vibes is happier with the Aquarian Sun and the constant adjustments we've been making. Expansive ideas and having fun come to the forefront. Luckily, with Mars in Capricorn, you'll probably be more prudent with your money than usual with Sag and Aquarius teamed up. So, plan to have a good day and be sure to treat yourself well. The independent nature of the current Sun and Moon pushes for a day of working alone or in a trusted group.
Moon in Sagittarius draws in spiritual vibrations through her connection to Spirit and spiritual matters. Spend some time in nature, ask for guidance from guardians and angels, and seek a quiet hour or two to reflect on your own healing and journey. Mini chicken pot pies
2 cans flakey layers biscuits
2 cans cream of chicken soup
2 cans cooked chicken, or prepare fresh chicken (2 cups)
1 bag frozen mixed vegetables
Mix soup, veggies and chicken in a bowl, season to taste.
Flatten biscuits out and press each one into a spot in a muffin pan, fill each biscuit with soup/chicken/veggie mix
Bake at 400 for 20 minutes

Strange days. So many things to look at and do. But, where to begin? The fixed nature of Sun Aquarius and Moon in Scorpio tends to bind us in place today. Inner work becomes more important than the mundane tasks related to work. The Moon is in harmony with Neptune today. That can cause illusive answers to suddenly become all too clear. We are multi-dimensional, if that helps. So, go within and ask your higher self for guidance. Then, trust the answers. The key will be to allow the exchange to take place without your usual mind chatter or judgments. Remember, both Venus and Mercury are retrograde in Capricorn. The Cosmos is playing for keeps right now.
Moon in Scorpio is empathic and healing. It just doesn't like to broadcast its intent out for the world to see. Use Frankincense for protection as you go about connecting to Source or your higher self. Walk with the unseen and use Clear Quartz crystals to amplify the exchange. Low Carb Enchilada Meatballs

INGREDIENTS
Meatballs:
* 1 lb ground beef
* 1 egg
* 1/4 cup grated cheddar cheese
* 2 Tbsp taco seasoning
* 1/2 tsp onion powder
* 1/2 tsp salt
* 1/4 tsp black pepper
*1/4 cup enchilada sauce
DIRECTIONS:
Meatballs:
* 1) Preheat oven to 400.
* 2) Add all of the meatball ingredients into a large bowl and mix well until combined.
* 3) Shape into approximately 15 meatballs and place on a baking sheet lined with aluminum foil.
* 4) Bake for 25 minutes or until cooked through.
Put together Casserole:
* 1) Preheat oven to 350.
* 2) Pour 1/4 cup enchilada sauce into bottom of small baking dish or cast iron skillet.
* 3) Place cooked meatballs into dish and top with remaining enchilada sauce. Top with shredded cheese.
* 4) Bake for 15 minutes or until cheese is melted and bubbly.
