Strawberry Cream Cheese Cobbler!!!

Strawberry Cream Cheese Cobbler!!!!

Strawberry Cream Cheese Cobbler
1 stick (1/2 cup) butter
1 egg, lightly beaten
1 cup milk
1 cup all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 quart whole strawberries, washed, capped and quartered
2 ounces cream cheese cut in small pieces, I just pinch off in little chunks
Preheat oven to 350˚. Melt butter and pour into a 10" cast iron skillet. In a small bowl, mix together the egg, milk, flour, sugar, baking powder and salt. Pour directly over the butter in the baking dish, but do not stir.
Add the strawberries, arranging in a single layer as much as possible. Sprinkle cream cheese pieces over strawberries. Place in preheated oven and bake for 45 minutes, or until top is golden brown and edges are bubbling.
Crust rises up and around the fruit, some of the fruit will still peak out of the top.

Dandelions have sunk their roots deep into history. They were well known to ancient Egyptians, Greeks and Romans, and have been used in Chinese traditional medicine for over a thousand years.
Dandelion is used in folk medicine to treat infections and liver disorders. Tea made of dandelion act as diuretic.
If you mow dandelions, they’ll grow shorter stalks to spite you.
Dandelions are, quite possibly, the most successful plants that exist, masters of survival worldwide.
A not so fun fact: Every year countries spend millions on lawn pesticides to have uniform lawns of non-native grasses, and we use 30% of the country’s water supply to keep them green.

The Gypsy Homestead Astro-Vibe for April 30, 2021:
Back to work. Well, the same thing happens every month. Moon in Sagittarius winds us up with good vibes and joy and then Moon in Capricorn comes along at 9:16 am (PDT/USA + 8 hrs UK). It wants everything in order and accounted for. Including your own thoughts and actions. Luckily, we get a boost from Uranus this time that brings in a need to break free from routines and savor a bit of freedom. Those energies show us that we're always a work in progress. Now that the Moon in Capricorn is here we have six planets in Earth signs. Think: grounded, task oriented, and steady as far as work goes today. Then, you can balance out those vibes with some rest or socializing with loved ones later.
Sandalwood will keep the Capricorn Moon's propensity to be gloomy at a minimum today. Garnets will also lift the mood and bring out the charm we all have hidden within. The body can feel old or slowed down. With the Taurean Sun in the mix it's a given that time spent in relaxation tonight will help release any stress you may have built up during the day. Productivity is on the cosmic menu for the weekend. Projects that include the outdoors - gardening for example - will go well. Mars is currently in Cancer. Wandering too far from home may seem distasteful. Meditation will be beneficial as a way to draw insights from the unseen into your realm. As we say goodbye to April give thanks for everything that went well this month. In late May we'll have two more planets go retrograde. But, Mercury and Venus will enter Gemini mid-month-ish. That will lighten up the vibes!

Don't let worry consume you! Bring on the happy! The Cosmos is pushing for a bit of gusto from you today. But, in true Sagittarian Moon form, the more you go with the flow and work from your sense of joy, the better things will be. Take some deep breaths and let go of all the junk and clutter clogging up your sense of humor. Put on some Lapis Lazuli and Patchouli or Ylang Ylang and let the vibes increase your confidence. Your intuition will get a big boost, too. Being productive just got a bit easier, if you follow today's astro advice. Later tonight, Neptune will sprinkle some fantasy glitter around and that could lead to fantastic ideas, good vibes, or prophetic dreams.
Up for some socializing? This Moon promotes long conversations or walks in nature as a means of healing. After the intensity of the recent Full Moon you may be looking to recalibrate your own thoughts about just about anything. That's okay. It's time to release and make room for the higher vibrations in your life. Reports that our planet Earth is into the 4th dimension are more prevalent. That's the land where allowing others their truth, love without strings, and non judgement dwell. So, you can see where being in the flow comes in. Enjoy the day. The Moon will get serious tomorrow when she enters Capricorn. Texas Sheetcake Cookies!!!!! 

Here is a great recipe for you to try this weekend.

Texas Sheet Cookies
Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes
Cookie
• 1 box chocolate cake mix
• 2 eggs {whisked}
• 1/3 cup oil
Frosting
• 1/2 cup butter
• 2 tbsp cocoa
• 3 tbsp milk
• 2 1/2 cups powdered sugar
1.Preheat oven to 350 degrees.
2.Combine cookie ingredients in large bowl and mix until completely incorporated. NOTE: Dough will be thick.
3.Using a medium sized cookie scoop {or heaping tablespoon}, scoop cookies onto a parchment lined cookie sheet.
4.Bake for 7-8 minutes, remove from oven and let cool on cookie sheet for 4-5 minutes before moving them to a cooling rack. Repeat until all of the dough is baked.
Frosting
1.Combine the first 3 frosting ingredients in a small saucepan over medium heat and whisk until the mixture has melted. Remove from heat, add powdered sugar and whisk until smooth.
2.Pour frosting over cookies. Use a knife or spoon to move excess frosting and be sure that each cookie is completely covered.
3.Let frosting set and serve. Keep cookies in an air tight container at room temperature for up to 3 days

Manifesting abundance can sound like a tall order at first, but the truth is that it really doesn’t have to be that difficult! While it’s great if you can read and understand the science behind the law of attraction,  you can quickly and easily boost your vibration (and thus your manifestation potential) just by connecting with certain simple tips that help you reshape your perspective.

Low Carb Salted Caramel Pumpkin Cheesecake Shots

These are SOOOO GOOOOOOD!!!!! If you are trying to watch your carbs, yet the sweet tooth monster has bitten you, THESE ARE THE ANSWER!!!   Just the right amount of sweet to satisfy the craving, yet still keep you on program!

What I love most is the no bake part. No, I think I love the taste the most. You try it and decide. Now I did use a couple of specialty products here. One reason is that I simply don't have tons of time in the kitchen these days. So you can make some substitutions, or you can make sure you have these two products on hand.

1. Walden Farms Caramel Dip. You could make your own, but that can be a tad complicated. This works. It is super sweet to me, so I cut back on the sweetener in the cheesecake portion.

2. Gingerbread flavored sugar free syrup. Mine happens to be Jordan's Skinny Syrups. You can use any brand you can find--Da Vinci for example. It doesn't have to be gingerbread flavor, but that certainly was nice. It makes the almonds taste like a crunched up cookie.

These are dessert shots. Very rich and no big portions. Just enough to satisfy a sweet tooth.

Salted Caramel Pumpkin Cheesecake Shots
4 oz cream cheese, softened
1/2 cup pumpkin puree
2 tbsp
erythritol blend
1/2 tsp pumpkin pie spice
3 tbsp
almond meal
1 tbsp sugarfree Gingerbread syrup
4 tbsp Walden Farms Caramel Dip
pinch Kosher salt

Combine cream cheese and pumpkin puree. Stir in erythritol blend and pumpkin pie spice. Mix with hand blender until smooth. In a small bowl, combine almond meal and gingerbread syrup. Spread onto a cookie sheet and toast for about 5 minutes until browned and lightly crisp. (I used my toaster oven at about 350.)

Divide the almond crumbs among the bottoms of 4 small dessert cups or shot glasses. If using narrow shot glasses, transfer the pumpkin cheesecake mixture into a sandwich bag. Snip the end and fill the glasses half way with the cheesecake. Spoon about 1 1/2 tsp of caramel sauce over the cheesecake. Use the remaining cheesecake mixture to fill the glasses, reserving enough for a decorative dollop for each. Top with additional caramel dip and sprinkle with a very tiny pinch of kosher salt. Add the decorative dollop of pumpkin mixture. Chill and serve. Use some adorable
shot glasses for visual appeal!!! 

Serves 4:     110 calories   4 net carbs    9 g fat

The more fun you can create the more memorable the time can be. It also gives rise to being a messenger for the light of Source. Baked Salsa Chicken

This baked salsa chicken is so easy, but it comes out juicy and bursting with flavor thanks to the salsa!

Ingredients

  • 4 chicken breasts, about 6 ounces each
  • 1 teaspoon garlic salt
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • 1 1/2 c Salsa
  • 1 cup shredded pepper jack cheese
  • 1 tablespoon chopped cilantro
 

Instructions

  1. Preheat oven to 375 degrees.
  2. Pound the chicken breasts to an even thickness.
  3. Season the chicken with the garlic salt, chili powder, and cumin.
  4. Pour ½ cup of salsa in the bottom of a 9x13 baking dish and spread to coat the bottom.
  5. Place the chicken on top of the salsa. Pour the remaining salsa over the top of the chicken.
  6. Bake for 30 minutes or until chicken reaches 165 degrees. 
  7. Remove from the oven and sprinkle the top of the chicken with the cheese. Return to the oven for 3-4 minutes to melt the cheese.
  8. Sprinkle with cilantro before serving.

Into the mystic.... This Full Moon in Scorpio can bring in messages and truths that shake up the status quo. Or, at least, the ones you may have intuitively known about, but were ignoring. It's time to let the Cosmos flow through and around you today. Because you really don't have the power to hold back the cosmic forces of change. The Moon enters the sign of the Scorpion at 9:18 am (PDT/USA + 8hrs UK). Then, the mood will become more somber and cause you to be intent on tuning into mysteries and looking for clues. Take a deep breath once in a while today. Remember to flow with the energies rather than resist them. Feel your soul from your head to your toes and give yourself gratitude for being uniquely you.
Since the Sun and Moon are in a direct opposition to each other you can feel like you are one person one moment and another version the next. This will pass by Wednesday. Use the vibes to open doorways through meditation, healing music, connecting with another, or divination with Tarot or other means. Here's a test of your level of awakening: Can you be the detached observer when dealing with others? Can you respond without anger or revenge? You know the answer. We are in a wave of massive change. These Cookie Dough Bars are a no-bake egg free recipe that you can easily share or eat them all yourself! Full of M&M's and goodness, everyone will love them!
 
Prep Time: 20 minutes
Cook Time: 1 minute
Chill Time: 2 hours
Total Time: 2 hours 21 minutes
 
Servings: 16
 
Calories: 470kcal

Ingredients

Cookie Dough

  • 1/2 cup salted butter softened
  • 3/4 cup brown sugar
  • 1/2 tsp vanilla extract
  • 2 cup all-purpose flour baked at 350 degrees F for 5 minutes (please see notes about baking the flour before using it in the recipe)
  • 14 oz can sweetened condensed milk
  • 1 cup minature chocolate chips
  • 1 cup minature M&M's
  • cooking spray

Topping

  • 1 cup semi-sweet chocolate chips
  • 2 tbsp salted butter
  • 3/4 cup minature M&M's

Instructions

  • Line an 8 x 8 baking dish, with straight sides, with parchment paper. Spray the parchment paper with cooking spray. Set aside.
  • In a large mixing bowl add the butter and brown sugar. Beat with a hand mixer until light and fluffy. Add vanilla extract and continue to beat for an additional minute.
  • Add flour and sweetened condensed milk, alternating between the two while mixing, on the low speed setting. Beat together until combined and a soft dough forms.
  • Using a spatula fold in the chocolate chips and M&M's into the dough.
  • Spread the dough out in an even layer in the 8 x 8 prepared baking dish.
  • Put the bars in the freeze for 30 minutes while making the chocolate topping.
  • In a small mixing bowl add the butter and chocolate chips. Place the bowl in the microwave for 30 seconds. Remove and stir. Place back in the microwave and repeat steps until chocolate is melted and smooth.
  • Remove the bars from the freezer and pour the melted chocolate evenly over the top of the cookie dough. Sprinkle additional M&M’s over the top of the chocolate and gently press them down into the melted chocolate.
  • Place the cookie dough bars in the refrigerator and chill for 2 to 3 hours, or until ready to serve.

Notes

It’s very important to cook the flour before mixing it into the recipe. Flour should not be eaten raw, so spread it out on a large baking sheet and bake at 350°F for 5 minutes to kill any bacteria.
 
You can use refrigerated cookie dough to make these if you prefer, but make sure to look for the “Safe to Eat Raw” labels. Pillsbury has refrigerated cookie dough that you can eat raw because the flour is cooked and the eggs are pasteurized. If you are using dry cookie dough mixtures, be sure to cook the flour for at least 5 minutes before mixing in the wet ingredients. Remove any chocolate chips though so they don’t melt when cooking the flour.
 
Turn this recipe into a holiday treat by adding green and red M&M’s for Christmas. If you can find red, white, and blue M&M’s, serve this up for 4th of July. Even pastel M&M’s would be a perfect Easter treat!

Crispy Parmesan Garlic Chicken with Zucchini is a fantastic one pan meal that the family will love! The chicken is so tender and breaded with an amazing parmesan garlic crust and the zucchini is sautéed in a delicious buttery parmesan garlic!

INGREDIENTS

 
  
  • 2 Chicken Breasts sliced in half, or 4 thin chicken breasts
  • 8 Tablespoons butter divided
  • ½ cup Italian Bread Crumbs
  • ½ cup plus 1 Tablespoon grated parmesan divided
  • ¼ cup flour
  • 2 medium zucchini sliced
  • 2 garlic cloves minced

INSTRUCTIONS

 
 
  • In a large skillet over medium heat melt 2 Tablespoons butter. To make the chicken: Melt remaining 4 tablespoons of butter in a shallow dish. In another shallow dish combine bread crumbs, parmesan cheese, and flour. Dip the chicken in the butter and then coat in the bread crumb mixture and place in skillet.
  • Cook on each side for about 3-4 minutes until the outside is crispy and the chicken is cooked throughout. Set aside on plate.
  • Add 2 Tablespoons of butter back to the skillet and saute' the minced garlic for a minute. Add the zucchini to the skillet and saute' until tender. Salt and pepper to taste and add some 1 Tablespoon parmesan. Add the chicken back to the skillet and heat for a minute or so. Serve immediately.

INGREDIENTS

 
  
  • ¼ cup Soy Sauce
  • 3 Garlic Cloves minced
  • 3 Tablespoons Brown Sugar
  • 1 teaspoon Sesame Oil
  • 1 pound Large Shrimp peeled and deveined
  • 1 Red Bell Pepper sliced
  • 1/2 cup Carrots shredded
  • ¾ cup Chicken Broth
  • 1 teaspoon Cornstarch
  • 2 cups Broccoli Florets Fresh
  • 1 cup Sugar Snap Peas
  • Slice Green Onion for garnish

INSTRUCTIONS

 
 
  • In a small bowl whisk together the soy sauce, garlic, brown sugar, and sesame oil. In a medium-sized skillet over medium-high heat add the shrimp, peppers, and carrots and pour the sauce on top. Cook for about 2-3 minutes or until shrimp is pink.
  • Whisk the chicken broth and cornstarch in a small bowl and add it to the skillet with the broccoli and sugar snap peas. Stir until incorporated and then cover and cook 3-5 minutes or until broccoli is tender and the sauce has thickened. Serve with chopped green onions and serve over rice if desired.

Think of it this way, as long as you're on the planet, every day is Earth Day! Especially when the Sun and Moon are in Earth signs. Moon in Virgo makes some positive connections that bring the gifts of Mama Earth into a sharp perspective. Enjoy what nature brings to you today. You'll have some help from Mars since he moves into nurturing Cancer at 4:49 am (PDT/USA + 8 hrs UK). Plants, gardening, organic foods, and getting out in nature will be wildly appealing this weekend. If possible, do some earthing to draw fresh vibrations into your body and aura.
Moon in Virgo would prefer that you get important tasks done before you venture out. However, just be sure to build in some time to go have fun with loved ones. To connect with these earthy energies use Eucalyptus or Rosemary to draw in the highest vibrations. They will cleanse and heal the energies in your space, too. Double Chocolate Cheesecake Muffins!!!!

These Chocolate Cheesecake Muffins aren't overly sweet, so they make a great breakfast or even double as dessert. But I am all for any excuse to have chocolate for breakfast!

 

YIELD: 20 MUFFINS

Double Chocolate Cheesecake Muffins

Double Chocolate Cheesecake Muffins - Rich, chocolate muffins with a layer of sweetened cream cheese for a light and tender breakfast or even dessert.

Ingredients

Muffins

  • 1/2 cup butter, at room temperature
  • 2/3 cup brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2/3 cup sour cream
  • 1 tsp ground cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2/3 cup milk
  • 1 cup mini chocolate chips

Cheesecake Layer

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup sugar
  • 1 large egg

Topping

  • 1/4 cup mini chocolate chips
  •  

To make the Muffins

  1. Preheat oven to 400 degrees. Line a cupcake pans with paper liners. 
  2. In a separate bowl whisk together flour, cocoa powder, salt, baking powder, baking soda and cinnamon. Set aside
  3. Beat brown sugar and butter together until creamy. Add egg, vanilla and sour cream. Beat until smooth. 
  4. Slowly add the flour mixture and the milk to the butter mixer, alternating between the two.
  5. Fold in chocolate chips. Set aside

To make the Cheesecake Layer

  1. Beat cream cheese until creamy. Add sugar and beat until smooth. 
  2. Add egg and beat until fully incorporated. Do not over mix. 

To assemble

  1. Place a spoonful of the muffin batter into the bottom of each liner. Top with cheesecake layer. Top with the remaining batter. 
  2. Sprinkle the tops of each muffin with the remaining 1/4 cup of chocolate chips. 
  3. Bake for 16-18 minutes until a tester comes out mostly clean.
  4. Remove from oven and let cook for 5 minutes before removing to a wire rack to cool completely.
