Grilled Spicy Lime Shrimp with Creamy Avocado Cilantro Sauce has a simple but full of flavor and spice marinade. The creamy avocado cilantro sauce is the perfect cool and creamy dipping sauce.

Ingredients
  • 1 pound of shrimp peeled and deveined
  • Juice of one large lime
  • 3 Tablespoons olive oil
  • 2 cloves garlic minced
  • 2 teaspoons chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon paprika
  • 1/2 teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes
Creamy Avocado Cilantro Sauce:
  • 1 avocado split and pitted
  • ½ cup lowfat greek yogurt
  • 1 clove garlic minced
  • juice of 1 lime
  • 2 tbsp cilantro chopped
  • salt and pepper to taste
Instructions
  1. In a small bowl whisk together lime juice, olive oil, garlic, chili powder, cumin, paprika, salt, pepper, red pepper flakes. Pour into a resealable bag and add shrimp. Toss to coat and marinate for 30 minutes.

  2. Preheat the grill to medium heat. Put the shrimp on skewers and place on the grill. Grill on each side for about two minutes or until no longer pink.

Creamy Avocado Cilantro Sauce:
  1. To make the creamy avocado cilantro sauce add the avocado, greek yogurt, garlic, lime and cilantro. Pulse in a food processor until smooth. Add salt and pepper to taste. Serve immediately with shrimp.

A super easy and delicious dinner begins here with Air Fryer Stuffed Peppers. Filled with a savory mixture and cooked to tender perfection, it is going to be a family favorite!

Ingredients
  • 4 whole bell peppers
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 1 pound lean ground beef
  • 1 15 ounce can of diced tomatoes
  • 1 8 ounce can of tomato sauce
  • 2 cups rice cooked
  • 1 Tablespoon Italian Seasoning
  • 1 teaspoon garlic powder
  • salt and pepper
  • 2 cups Colby Jack cheese shredded
Instructions
  1. To prepare the peppers, slice the tops off and remove any veins or seeds inside. In a medium sized saucepan over medium high heat add the olive oil and onion. Cook until almost tender. Add in the ground beef and cook and crumble until no longer pink.

  2. Add in the diced tomatoes, tomato sauce, rice, Italian seasoning, garlic powder, and salt and pepper.
  3. Stuff the peppers with the mixture and place in the basket of the air fryer.

  4. Cook the peppers at 360 degrees until tender for for 10 minutes. Top with cheese and then cook for an additional 2-3 minutes.

Soft, chewy, Butter Pecan Cookies made with lightly toasted pecans and (optional) crunchy toffee bits. These are buttery and delicious and there's no mixer and no chilling required!

Ingredients
  • 1 cup unsalted butter melted and cooled at least 10 minutes (226g)
  • 1 1/4 cup dark brown sugar tightly packed
  • 1/2 cup sugar
  • 1 large egg + 1 egg yolk room temperature preferred*
  • 1 ½ teaspoons vanilla extract
  • 3 cups all purpose flour
  • 1 teaspoon cornstarch
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 1/2 heaping cups pecan halves
  • 1/2 cup Heath Toffee bits optional, but recommended!
Instructions
  1. Preheat oven to 350F and line a cookie sheet with parchment paper.
  2. Spread pecan halves evenly over cookie sheet and bake on 350F for 3-5 minutes.
  3. Remove from oven and coarsely chop (do not turn off your oven). Set aside.
  4. In a large bowl, combine melted, cooled butter and sugars. Stir well.
  5. Add eggs, egg yolk, and vanilla extract and stir until well-combined.
  6. In a separate, medium-sized bowl, whisk together flour, cornstarch, baking soda, baking powder, and salt.
  7. Gradually add flour mixture to wet ingredients until completely combined.
  8. Add chopped pecans and toffee bits (if using) and stir well.
  9. Line cookie sheets with parchment paper and drop cookie dough by heaping 1 1/2 Tablespoon onto prepared cookie sheet, spacing at least 2" apart.
  10. Transfer to 350F oven and bake for 10-12 minutes. Allow to cool completely on baking sheet before enjoying!
  11. Store any leftover, cooled cookies in an airtight container at room temperature for 3-5 days

Ingredients:
2 6 oz. Skin on Red Snapper Fillers
Sea Salt
Freshly ground pepper
1tbsp. Salted butter softened
1 1/2 tsp. Fresh ginger matchsticks (peel before slicing)
1/2 serano chili cut into thin slices
4 whole cilantro sprig leaves and stems cut on the bias
1 scallion thinly sliced on the bias
Instructions:
Prepare a deep wok or pot with tight fitting lid and a shallow baking dish that fits inside. Place a few upside-down ramekins, an inverted bamboo steamer or a perforated insert of a pressure cooker in the wok to hold the pie plate above the bottom of the pot to allow steam to circulate. Season the fish with salt and pepper. Brush the fillers on both sides with butter. Lay the fish skin side up in the baking dish and sprinkle the ginger, chili, cilantro and scallions on top. Bring 2 inches of water to a simmer in the wok. Place the baking dish on top of the ramekins, cover the pan and steam there until there is no resistance when the fish is pierced with a roasting fork (about 8 minutes). Remove the steamer from the heat. Serve each filled with herbs and juices on top.

Salmon and Vegetable Skewers

Salmon and Vegetables Skewers:
Ingredients:
1 lemon zest and juice
1tbs. Olive oil
2 shallots, minced
2 cloves garlic, minced
3/4 c finely chopped herbs such as basil, parsley, thyme, oregano.
Salmon fillets cut into cubes
Kosher salt
Fresh ground pepper
1 yellow pepper cut into pieces
32 cherry tomatoes
2 celery stalks cut into pieces
16 bamboo skewers pre-soaked
Instructions:
In a large reusable bag, add the lemon zest and juice, Olive oil, shallots, garlic and herbs and shake gently to coat.
Marinade for 30 minutes
Place equal portions of peppers, tomatoes, celery, salmon onto the skewers. Place onto a preheated grill, turning to cook on all sides for about 2 minutes each side until opaque in color.

Cast Iron Steak Fajitas:
Ingredients :
1lb. Skirt steak thin slices
1 bottle beer
2 limes
2 garlic cloves chopped
Assorted colored peppers slices
1 jalapeno seeded and sliced
1 red onion sliced
4-6 tortillas (low carb)
Salt/pepper
Salsa, sour cream, guacamole, and shredded cheese to garnish.
Instructions:
In a large bowl, combine beef, beer, lime, salt, pepper, garlic. Cover and refridgerate 20 min.
Heat a large cast Iron skillet or grill pan over high heat or until very hot. Spray skillet with cooking spray and add peppers, jalapeno and pinch of salt. Cook until tender. Remove from pan to plate and cover to keep warm.
Add onion to hot skillet, saute until translucent. Season with salt and pepper. Remove and plate and cover to keep warm. Remove steak from marinade and add to hot skillet. Stir occasionally until browned and crisp.
Serve steak in tortillas with peppers and onions. Add optional garnishes.

Sweet Amish Macaroni Salad

Sweet Amish Macaroni Salad:

Sweet Amish Macaroni Salad:
1 lb salad macaroni
4 hard-boiled eggs (chopped)
1 small onion, finely diced
3 celery ribs, diced small
1 small sweet pepper, seeded and diced small (red or orange)
Dressing
2 cups light mayonnaise (do not use Miracle Whip)
1/2 cup sugar
1/8 cup yellow mustard
2 tablespoons dill pickle relish
1 tablespoon white vinegar or 1 tablespoon apple cider vinegar
3/4 teaspoon celery seed
1/4 teaspoon salt
paprika (to garnish)
How to make it :
Cook the macaroni according to directions, drain well.
While pasta is cooking mix up all the dressing ingredients till well blended and set aside.
Chop up all the veggies.
When macaroni has cooled and drained well mix in the dressing (add all of it if you like very creamy salad.if you don’t like a lot of dressing leave out about 1/2-3/4 c of the dressing. Remember that as it sets it will soak up some of the dressing.
Refrigerate for at least one hour, the longer you let it set the better the flavor.

Loaded Cauliflower Salad is everything you love about loaded potato salad in a scrumptious LOW CARB form! Seriously, no one could even tell- it is just simply incredible! Loaded with bacon and cheese!
Ingredients:
1 head cauliflower
1 tablespoon olive oil
salt & pepper to taste
1/2 cup sliced radishes
1/2 cup diced celery
1/2 cup shredded sharp cheddar cheese
2 green onions, sliced
4 slices bacon cooked and crumbled
DRESSING
1/2 cup mayonnaise
1/4 cup sour cream
3 tablespoons sweet relish
1 teaspoon Dijon mustard
1 tablespoon apple cider vinegar
salt & pepper to taste
Instructions
Preheat oven to 425°F.
Cut the florets off of the thicker center stalk of the cauliflower.
Chop the florets into bite sized pieces and transfer to a parchment paper lined baking sheet.
Using your hands, toss the cauliflower with olive oil, salt and pepper.
Bake 15-20 minutes or until tender crisp.
Set aside to cool completely.
In a small bowl, whisk the mayonnaise, sour cream, sweet relish, Dijon, apple cider vinegar, salt, and pepper.
In a large mixing bowl, combine the cooled cauliflower, radishes, celery, cheese, green onions and bacon.
Pour the dressing over the cauliflower mixture and toss to combine. Allow to chill for 2 hours before serving!
