Beef Enchiladas!!!!!

Beef Enchiladas!!!! 

Simple homemade Beef Enchiladas are full of Mexican comfort food flavors. This recipe includes a quick homemade red enchilada sauce and an easy ground beef filling that’s ready for the oven in 30 minutes.

Ingredients

Red Enchilada Sauce

  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch
  • 4 tablespoons chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon dried Mexican oregano
  • 2 cups vegetable broth

Ground Beef Filling

  • 1 1/2 pounds lean ground beef
  • 1 white onion diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces diced green chiles

Enchiladas

  • 12 corn tortillas
  • 2 tablespoons vegetable oil for frying
  • 3 cups shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro

Instructions

Make the enchilada sauce:

  • Heat vegetable oil in a medium saucepan over medium heat. Whisk in cornstarch, chili powder, garlic powder, salt, cumin, and oregano. Pour in vegetable broth and bring to a simmer until thickened, about 2-3 minutes. Remove from heat and set aside.

Make the ground beef filling:

  • Heat a large skillet over medium-high heat. Add in ground beef and onion and season with salt and pepper. Cook until ground beef is browned and cooked through, about 7 to 10 minutes. Drain any excess fat. Stir in green chiles.

Assemble enchiladas:

  • Preheat oven to 350 degrees and lightly grease a 9x13 pan with nonstick cooking spray. Spread 1/2 cup of enchilada sauce in the bottom of the pan.
  • Heat 1 tablespoon of vegetable oil in a small skillet over medium heat. Working one at a time, fry tortillas in oil until soft. DO NOT CRISP.
  • Dip each tortilla into the enchilada sauce to coat and set on a plate. Fill with a scoop of the ground beef filling and top with a generous pinch of cheese. Roll and place into the prepared 9x13 pan. Drizzle remaining sauce over enchiladas in the pan and top with remaining shredded cheese. Bake, uncovered, in the preheated oven for 20-25 minutes until cheese is warm and bubbly. Top with chopped cilantro and serve hot.

You will experience God making your rough places smooth. Every area of your life is being smoothed out by the Spirit of God. You will see a constant provision and flow of His wisdom as you've never seen. Some of His wisdom, you will ask for, and at other times, it will just come to you from those around you without asking. This wisdom will help you make wiser choices that will help to smooth out your life. You've endured hardness, but your life isn't supposed to be hard and rough all of the time. Follow His wisdom and counsel. The Lord wants to make your rough places smooth.
Prayer: Father God, thank you for speaking directly to my heart. You are my God, and no one can do what you do. Some areas of my life have been rough and hard. I receive your wisdom and invite you to come in and smooth out every rough place. Thank you for smoothing it out, Lord. In Jesus' name, Amen.

Ingredients

Brownie

  • 1 cup all-purpose flour plus 1 teaspoon flour
  • 1/2 cup cocoa powder
  • 1/4 tsp salt
  • 1 1/2 cup granulated sugar
  • 3/4 cup salted sweet cream butter melted and cooled
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 cup mini semi-sweet chocolate chips

Coconut

  • 2 1/2 cup sweetened coconut flakes
  • 2/3 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

First Brownie Layer

  • Preheat the oven to 350°F. Line an 8x8 baking dish with parchment paper and spray lightly with nonstick spray. Set it aside.
  • In a medium-sized mixing bowl whisk together the 1 cup of all-purpose flour, cocoa powder, and salt. Set it aside.
  • In a small bowl, stir together the mini chocolate chips and the teaspoon of flour. Set it aside.
  • In a medium-sized mixing bowl whisk together the melted and cooled butter, granulated sugar, eggs, and vanilla extract.
  • Using a wooden spoon, stir in the flour mixture. Stir just until the mixture is well combined.
  • Fold in the mini chocolate chips.
  • Evenly spread 1/2 of the brownie batter into the prepared baking dish.

Coconut Layer

  • In a small mixing bowl, stir together the coconut flakes, sweetened condensed milk, vanilla, and salt. Stir until the ingredients are well combined.
  • Using a silicone spatula or an offset spatula, evenly spread the coconut filling carefully over the top of the bottom brownie layer.

Second Brownie Layer

  • Spread the remaining 1/2 of the brownie batter over the top of the coconut filling.
  • Bake for 35 to 40 minutes.
  • Allow the brownies to completely cool before slicing 4 across and 4 down servings, about 2 in x 2 in squares.

Let's just say that the Sun and Moon aren't the best of friends today. Sun Gemini could care less about schedules or commitments while the Moon in Virgo has a clipboard and stop watch just waiting for you to get started so you'll "feel" better about yourself. It's best to stay away from self criticism and stay in a higher mind. The vibes are discordant and rather scattered. So, focus on getting done whatever is good for the order. That will create a productive harmony between you and others. Then, do what pleases you most. Once the Sun enters Cancer there will be time to obsess over details.
Thoughts can trip you up today so keep a rein on the inner critic and all that stuff Virgo Moon keeps bringing up. Really. You will be okay and no, you don't have to do it ALL to be worthy. Work with Amber to draw out negativity within the body, emotions, and your space. Citrus scents are a good choice. So is Sandalwood. Give yourself a break tonight and order in. You do deserve to be good to yourself and others. On the otherhand, you can criticize the pizza instead of your own cooking. The Hermit card in Tarot represents Virgo. Awesome 7 Layer Dip!!!!!    What an easy to make, appetizing side dish you can make for your weekend cookout!!!  I know what im making this weekend! 

Awesome 7 Layer Dip is an addicting creamy dip that includes all of your favorites, like guacamole, refried beans, and sour cream!  You will be amazed how simple it is to put together such an incredibly delicious dip!

 

INGREDIENTS

 
  
  • 1 16 ounce can refried beans
  • Homemade Guacamole
  • 1 cup sour cream
  • 2 Tablespoons Homemade Taco Seasoning
  • 1 cup salsa
  • 1 cup Colby Jack cheese shredded
  • 1/2 cup sliced olives
  • 1/4 cup cherry tomatoes sliced
  • 2 green onions sliced

INSTRUCTIONS

 
 
  • In a 8x8 inch dish layer the refried beans, and guacamole. In a small bowl mix the sour cream with the taco seasoning and layer on top of the guacamole. Then layer salsa on top.
  • Top with shredded cheese, olives, tomatoes, and green onions.
  • Enjoy!!!!!

"Homestead Recipes" for Thursday June 10 2021 ULTIMATE SLOW COOKER RIBS!!!

Ultimate Slow Cooker Fall Off The Bones Ribs!!!! 

These Slow Cooker ribs are going to melt in your mouth and fall off the bone! They are cooked low and slow so they are perfectly tender and then covered in a sauce that's absolutely to die for!

 

INGREDIENTS

 
  
  • 4 pounds pork baby back ribs
  • 1 Tablespoon brown sugar
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups Homemade BBQ Sauce or Store Bought

INSTRUCTIONS

 
 
  • Prepare your ribs by removing the membrane and patting dry with a paper towel.
  • Prepare the rub by combining brown sugar, paprika, garlic powder, onion powder, salt and pepper. Rub evenly on top of the ribs.
  • Cut the ribs in half. Add half of the rack of the ribs into the bottom of the slow cooker. Pour half of the sauce on top and layer with the other rack with remaining sauce. You can also wrap the ribs around the slow cooker if the top will fit on.
  • Cook the ribs on low for 6-7 hours or high for 3-4 hours.
  • Preheat oven to 425 degrees Fahrenheit. Remove the ribs and set on a baking sheet. Pour the sauce on the top. Cook for 10 minutes until the tops get crispy. Brush with additional sauce if needed.

Divine Rescue

I have come down to rescue them.

Exodus 3: 7-10

After being informed of a 911 call from a concerned citizen, a police officer drove alongside the train tracks, shining his floodlight into the dark until he spotted the vehicle straddling the iron rails. The trooper’s dashboard camera captured the harrowing scene as a train barreled toward the car. “That train was coming fast,” the officer said, “Fifty to eighty miles per hour.” Acting without hesitation, he pulled an unconscious man from the car mere seconds before the train slammed into it.

Scripture reveals God as the One who rescues—often precisely when all seems lost. Trapped in Egypt and withering under suffocating oppression, the Israelites imagined no possibility for escape. In Exodus, however, we find God offering them words resounding with hope: “I have indeed seen the misery of my people in Egypt,” He said. “I have heard them crying out . . . and I am concerned about their suffering” (3:7). And God not only saw—God acted. “I have come down to rescue them” (v. 8). God led Israel out of bondage. This was a divine rescue.

God’s rescue of Israel reveals God’s heart—and His power—to help all of us who are in need. He assists those of us who are destined for ruin unless God arrives to save us. Though our situation may be dire or impossible, we can lift our eyes and heart and watch for the One who loves to rescue.

God, I’m in real trouble, and if You don’t help me, I don’t see a good ending. Will You help me? Will You rescue me?

SCRIPTURE INSIGHT

The book of Exodus describes the culmination of the Israelites’ time in Egypt. They’d been in the land for 430 years (Exodus 12:40) and had become so numerous that the Egyptians decided to treat them harshly to prevent their numbers from increasing (1:6-10). God had made a promise to Abraham to bring his descendants to the land of Canaan (Genesis 15:13-16; 17:8)—“a land flowing with milk and honey” (Exodus 3:17)—and God always keeps His promises. When He appeared to Moses in the burning bush in chapter 3, it was part of His plan unfolding. However, Pharaoh wouldn’t allow the Israelites to go. Chapter 12 describes their final release, but they continued to face many challenges that left them wandering in the wilderness until they finally reached the promised land (see Joshua 3-4).
