Red Snapper With Ginger

Red Snapped with Ginger
Ingredients:
2 6 oz. Skin on Red Snapper Fillers
Sea Salt
Freshly ground pepper
1tbsp. Salted butter softened
1 1/2 tsp. Fresh ginger matchsticks (peel before slicing)
1/2 serano chili cut into thin slices
4 whole cilantro sprig leaves and stems cut on the bias
1 scallion thinly sliced on the bias
Instructions:
Prepare a deep wok or pot with tight fitting lid and a shallow baking dish that fits inside. Place a few upside-down ramekins, an inverted bamboo steamer or a perforated insert of a pressure cooker in the wok to hold the pie plate above the bottom of the pot to allow steam to circulate. Season the fish with salt and pepper. Brush the fillers on both sides with butter. Lay the fish skin side up in the baking dish and sprinkle the ginger, chili, cilantro and scallions on top. Bring 2 inches of water to a simmer in the wok. Place the baking dish on top of the ramekins, cover the pan and steam there until there is no resistance when the fish is pierced with a roasting fork (about 8 minutes). Remove the steamer from the heat. Serve each filled with herbs and juices on top.

Salmon and Vegetable Skewers!!!!!

Salmon and Vegetable Skewers

Salmon and Vegetables Skewers:
Ingredients:
1 lemon zest and juice
1tbs. Olive oil
2 shallots, minced
2 cloves garlic, minced
3/4 c finely chopped herbs such as basil, parsley, thyme, oregano.
Salmon fillets cut into cubes
Kosher salt
Fresh ground pepper
1 yellow pepper cut into pieces
32 cherry tomatoes
2 celery stalks cut into pieces
16 bamboo skewers pre-soaked
Instructions:
In a large reusable bag, add the lemon zest and juice, Olive oil, shallots, garlic and herbs and shake gently to coat.
Marinade for 30 minutes
Place equal portions of peppers, tomatoes, celery, salmon onto the skewers. Place onto a preheated grill, turning to cook on all sides for about 2 minutes each side until opaque in color.

Cast Iron Steak Fajitas:
Ingredients :
1lb. Skirt steak thin slices
1 bottle beer
2 limes
2 garlic cloves chopped
Assorted colored peppers slices
1 jalapeno seeded and sliced
1 red onion sliced
4-6 tortillas (low carb)
Salt/pepper
Salsa, sour cream, guacamole, and shredded cheese to garnish.
Instructions:
In a large bowl, combine beef, beer, lime, salt, pepper, garlic. Cover and refridgerate 20 min.
Heat a large cast Iron skillet or grill pan over high heat or until very hot. Spray skillet with cooking spray and add peppers, jalapeno and pinch of salt. Cook until tender. Remove from pan to plate and cover to keep warm.
Add onion to hot skillet, saute until translucent. Season with salt and pepper. Remove and plate and cover to keep warm. Remove steak from marinade and add to hot skillet. Stir occasionally until browned and crisp.
Serve steak in tortillas with peppers and onions. Add optional garnishes.

Sweet Amish Macaroni Salad

Sweet Amish Macaroni Salad:

Sweet Amish Macaroni Salad:
1 lb salad macaroni
4 hard-boiled eggs (chopped)
1 small onion, finely diced
3 celery ribs, diced small
1 small sweet pepper, seeded and diced small (red or orange)
Dressing
2 cups light mayonnaise (do not use Miracle Whip)
1/2 cup sugar
1/8 cup yellow mustard
2 tablespoons dill pickle relish
1 tablespoon white vinegar or 1 tablespoon apple cider vinegar
3/4 teaspoon celery seed
1/4 teaspoon salt
paprika (to garnish)
How to make it :
Cook the macaroni according to directions, drain well.
While pasta is cooking mix up all the dressing ingredients till well blended and set aside.
Chop up all the veggies.
When macaroni has cooled and drained well mix in the dressing (add all of it if you like very creamy salad.if you don’t like a lot of dressing leave out about 1/2-3/4 c of the dressing. Remember that as it sets it will soak up some of the dressing.
Refrigerate for at least one hour, the longer you let it set the better the flavor.

Loaded Cauliflower Salad is everything you love about loaded potato salad in a scrumptious LOW CARB form! Seriously, no one could even tell- it is just simply incredible! Loaded with bacon and cheese!
Ingredients:
1 head cauliflower
1 tablespoon olive oil
salt & pepper to taste
1/2 cup sliced radishes
1/2 cup diced celery
1/2 cup shredded sharp cheddar cheese
2 green onions, sliced
4 slices bacon cooked and crumbled
DRESSING
1/2 cup mayonnaise
1/4 cup sour cream
3 tablespoons sweet relish
1 teaspoon Dijon mustard
1 tablespoon apple cider vinegar
salt & pepper to taste
Instructions
Preheat oven to 425°F.
Cut the florets off of the thicker center stalk of the cauliflower.
Chop the florets into bite sized pieces and transfer to a parchment paper lined baking sheet.
Using your hands, toss the cauliflower with olive oil, salt and pepper.
Bake 15-20 minutes or until tender crisp.
Set aside to cool completely.
In a small bowl, whisk the mayonnaise, sour cream, sweet relish, Dijon, apple cider vinegar, salt, and pepper.
In a large mixing bowl, combine the cooled cauliflower, radishes, celery, cheese, green onions and bacon.
Pour the dressing over the cauliflower mixture and toss to combine. Allow to chill for 2 hours before serving!

Happy Full Moon!!!!

The Libra Full Moon on March 28/29 carries some beautiful, high-powered energies for healing, protection, and harmony.
At the time of this Libra Full Moon, Venus, Chiron, and the Sun will all be aligned. The Moon will also make a perfect triangle configuration to both Saturn and Mars, known as a Grand Trine.
All of this combined gives the March Full Moon some potent energies, and it’s likely we will be able to feel its vibrations coursing through our body.
Full Moons are always a time of release, and as this is the first Full Moon since the start of the Equinox and astrological new year, we may find ourselves naturally purging and clearing the past.
The Libra energy also supports us in finding a balance between the old state of what once was and the new state of what could be, and the grace and discernment that is needed to either hold on or let go.
The presence of Chiron and Venus along with the Sun also colors the energy of this Full Moon. Chiron is an asteroid known as the wounded healer. It represents the wounds that we come into this life with and the wounds we inherit along the way.
The presence of Venus in this alignment of planets also softens the energy, reminding us that our rising can happen in our own time, in our own way, and from a place of love.
This combination of energy is soft and sensitive, allowing us to open to the truth of who we are. You are whole, and beautiful, and perfect just as you are.
The other cosmic configuration that sweetens this Libra Full Moon is the Grand Trine alignment between the Moon, Mars, and Saturn.
These three will form a perfect triangle, which is said to bring protection, harmony, and ease. A Grand Trine is considered a positive omen, where things flow in an easy and smooth direction.
The combination of Mars, Saturn, and the Moon also indicates rewards after hard work. You may find that projects and goals you have been working on bud and blossom into a new fullness.
Full Moons represent harvest and completion points, so you may find yourself at the end of the road on a long journey you have been working hard to complete.

The power of yesterday's Libran Full Moon lingers in the cosmic vibes. Libra always highlights the patterns and levels of relationships. Lessons with others are often karmic in nature and ask us to grow through them. We all know those lessons aren't always pleasant. It's time to heal any soul bruises that linger from the past. You are worthy of the highest forms of love given freely from others. If you're still trying to manipulate others it's time to stop. At the very least, trust yourself that you'll be cooperative with others because it feels good or is a part of your value system.
Most everything you do today will go well as long as you are working from a place of harmony. Full Moons tend to bring secrets to light. Events that pertain to groups of people may be brought to light. Veils can be ripped off of hidden motives. Lapis Lazuli and Palo Santo can be valuable in keeping your vibes high while adding a layer of protection. Turn off the distractions tonight and just be. Feel the vibes and listen to them. This is a year of change. Ride the cosmic waves!
This week offers up opportunities to clear out old beliefs or things that no longer support you. Make room for new things coming in. Be open to change.

Super Worm Moon in Libra will rise today!
It's the magical time of the month where the cycle of the moon once again grows full, illuminating all our inner shadows and prompting them for release. The March full moon is considered more significant than most, as it is the first full moon since the start of the new astrological year. That means that everything we do this moon will be supercharged compared to the remaining moons for 2021, which makes it an excellent time for inner work. Let's talk a little bit about what you can expect to feel this mysterious full moon.
To start, March's full moon goes by the name 'Worm Moon,' referencing the earthworms that emerged from the soil at the start of spring, bringing with them the return of the robins. However, spring brings with it more than just the birds and the bees, and the biggest energy to be felt at this time is new life and forward movement. This is a period where we are transitioning out of the slower, stagnant months of winter and beginning our preparation for the sun's return, making this a productive and merry time of planting seeds, energetically and physically.
But aside from the changes with the transformative energy of spring, March's full moon also takes place in the sign of Libra. The air sign, represented through the symbol of the balancing scales, is a natural peacemaker and craves the stability of inner and outer peace in all aspects of their life. For this reason, this month, the moon will inspire us to dig deep and resolve issues so that we may be guided towards a peaceful resolution to problems in our life. To help out with this, we also have the moon forming a powerful opposition with the dwarf planet of Chiron, as well as the love planet, Venus. This opposition will cause old wounds to resurface in relationships, pulling our emotions through a rollercoaster of past heartbreaks. However, it isn't as bad as it seems, as working through this stagnant energy will help us to grow and blossom in the coming spring and embrace all the healing we've long needed and deserved.
