Bacon and Cheese Stuffed Portobello Mushrooms!

The Gypsy Homestead Food-Vibe of the Day:
Bacon and Cheese Stuffed Portobello Mushrooms
KETO FRIENDLY
Ingredients:
2 large portabella mushrooms
2 tablespoons extra virgin olive oil
1/2 sweet onion
4 slices bacon ( precooked)
4 ounces cream cheese
salt and pepper
1/3 cup Mozzarella cheese
1 tablespoon Parmesan cheese
Procedure:
Preheat oven to 400 degrees F. Wash the portabellas then scrape out the gills and remove the stems. Place them cap down in a pan then drizzle 2 tbsp of olive oil over them. Roast in the oven for 12 minutes. While they are roasting, in a skillet over medium heat, add a tbsp. of olive oil. Chop the onions up and put them in the skillet. Cook until they start to brown, about 5 minutes. Add the bacon and cook for an additional 2 minutes. Remove from heat and stir in the cream cheese. Take the mushrooms out of the oven salt and pepper them, then turn them over and salt and pepper them again. Spread the mixture onto the mushrooms. Distribute the Parmesan cheese over each mushroom. Distribute the Mozzarella Cheese on each mushroom. Place back into the oven for 5 minutes. Take out and enjoy!

15 Minute Healthy Roasted Chicken and Vegetables!!!

The Gypsy Homestead Food-Vibe of the Day:
15 MINUTE HEALTHY ROASTED CHICKEN AND VEGGIES
#KETO friendly 😋
Ingredients:
2 medium chicken breasts, chopped
1 cup bell pepper, chopped (any colors you like)(I love Red and Yellow)
½ onion, chopped (I use Purple)
1 zucchini, chopped
1 cup broccoli florets
½ cup tomatoes, chopped or plum/grape
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
¼ teaspoon paprika (optional
Directions
Preheat oven to 500 degree F.
Chop all the veggies into large pieces. In another cutting board chop the chicken into cubes.
Place the chicken and veggies in a medium roasting dish or sheet pan. Add the olive oil, salt and pepper, Italian seasoning, and paprika. Toss to combine.
Bake for 15 minutes or until the veggies are charred and chicken is cooked. Enjoy with rice, pasta, or a salad.

Witches Pumpkin Soup

Let the pumpkin party begin 🎃 and go with this Autumn classic seasonal soup! 🥣
You Need:
1kg Pumpkin peeled and diced 🎃
2 tablespoons Olive Oil 🫒
2 teaspoons Leeks chopped🥬
1 Garlic Clove crushed 🧄
1/2 teaspoon Ground Coriander🌿
1 teaspoon Cumin🧂
1/2 teaspoon Nutmeg🌰
1 Onion chopped 🧅
1 Potato peeled and diced 🥔
1ml Vegetable Stock🥕
125ml Thin Cream🍶
Instructions:
~ Place the prepared pumpkin in a dish, drizzle with oil and season with leek, garlic, coriander, cumin and nutmeg.
~ Preheat the oven to 180C and cook the pumpkin for 40 minutes or until tender.
~ Meanwhile, heat butter or oil in a pan and sauté the onions and fry the potatoes. Pour in the vegetable stock and bring to a boil. Simmer and stir every now and then. Add the pumpkin, taste and season if needed. Remove from the heat and leave to cool slightly.
~ Puree the soup until smooth and creamy. Return to the heat, stir in the cream and serve.

Easy One Pot Chicken Burrito Bowl (low carb)

The Gypsy Homestead Food-Vibe of the Day:
Easy One-Pot Chicken Burrito Bowls
This is wonderful and sure to become a family favorite!
*I make mine #KETO friendly by leaving out the beans and using cauliflower rice
Ingredients
1 pound boneless, skinless chicken breasts, diced into bite sized pieces
3 tablespoon of olive oil
1/4 cup of diced yellow onion
1 cup of uncooked extra-long grain rice (substitute cauliflower rice to make Keto friendly)
1-14.5 oz can of diced tomatoes, drained
1-15 oz can of black beans, drained and rinsed (omit beans to make Keto friendly)
1/2 teaspoon of garlic powder
1/2 teaspoon of chili powder
1 teaspoon of cumin
2-1/2 cups of low-sodium chicken broth
2 cups of colby jack, monterey jack or cheddar cheese
kosher salt and pepper
freshly diced tomatoes
diced green onions
sour cream
guacamole
Directions
Start by sautéing onions in 2 tablespoon of olive oil until they start to soften.
Season diced chicken with 1 teaspoon of kosher salt and 1/2 teaspoon of black pepper.
Add chicken to pan and cook over medium high heat until chicken has started to brown.
Move chicken to one side of pan, in the other side of the pan add an additional tablespoon of olive oil and sauté uncooked rice for about 2 minutes or just until some grains start to turn golden brown.
Stir in black beans, canned tomatoes, chicken broth, garlic powder, chili powder and cumin.
Bring to a simmer, cover and reduce heat to low.
Cook about 20 minutes or until rice is tender.
Season with additional salt and pepper as needed.
Sprinkle with cheese, recover and let set for 2-3 off heat to melt cheese. Garnish with fresh tomatoes, green onions, sour cream and guacamole.
